WHY WE LOVE THIS COFFEE // After this coffee arrived, we ran some sample roasts to cup and we were blown away by the results. As this coffee cooled the notes of pink lemonade were so vibrant we roasted it medium to mellow it and finish with that fruity flavor.
Finca Santa Isabel is located in the department of Santa Rosa, about 60 km southeast of Guatemala City. Since 1899, the farm has been family owned and operated for four generations by the Keller family. In 2004, Santa Isabel experienced a widspread disease on their coffee plants. After extensive research, the Keller family decided that the only way to rejuvenate the farm was to implement organic agriculture techniques and the 2007-2008 harvest became the first season the farm went organic. Biodiversity and sustainability are key components in the production of Santa Isabel coffee and the preservation of the nature reserve. Each coffee cherry is carefully selected, handpicked, and sorted, guaranteeing a consistent and high quality product and then dried by sun drying on patios or by machine.
